Incorporating goat cheese and other goat dairy into cooking was just a natural consequence, since she was already an avid chef. Maggie lives on twelve acres in rural San Mateo County of California, with her husband, Jim, and their teenage son, Eric. 1x red onion chopped
Fry in a pan with a dash of olive oil and a small knob of butter
Add 1x tablespoon of brown sugar
Add 1 glug of balsamic vinegar
Cook on low heat (slight bubbling) for 30 minutes or until caramelised.

Whilst onions are cooking, roll out a sheet of puff pastry. Cut a circle out for the base of the tart. Add an extra layer (approx 1cm) around the rim.
Prick the base/centre pastry with a fork
Glaze the rim with milk

Once the onions are ready, place in the centre of the tart. Place the goats cheese (1cm thick) on top.

Cook at 180 degrees Celsius for approximately 15 minutes or until pastry has risen and is golden.

Serve with a green leaf salad and dash of balsamic vinegar.

Season to taste

Notes: More like a fluffy custard quiche with a heart of silky strands of sweet, caramelized onions. Very good. Loved the side salad of mixed greens and tomatoes with Kalamata tapenade.
